Clay Pot Cooking

Clay cookware, bakeware, and earthenware has been hand made in Pomaire, Chile since the mid 1800’s. These distinctive pieces, called Pomaireware™, are both functional and decorative; they cook well and they make unique serving dishes.

The importer of Pomaireware™ is a Fair Trade Federation member.
Pomaireware™ is made of unglazed lead-free clay.

Ovens work around the clock in Pomaire, Chile, packed full of clay cookware. Each item is formed, dried, then smoothed and burnished with an agate stone before being fired. No glaze or varnish is used, the only ingredient is lead free clay. It takes around 8 hours in the oven to create the dry, hard finish. This is a hand made item, so no two are exactly alike, and each one has it’s own blemishes and shades of color. Colors of pots will vary from earthy brown to reddish, and color will change with use in the oven or stove top.

A Pomaireware™ clay baker distributes heat evenly and maintains the moisture of food when used in your oven. Every type of cookware has it's own unique cooking characteristics, and many people enjoy clay pot cooking for their favorite recipes - taste the difference with this slower cooking earthenware. Oven safe up to 450 degrees Fahrenheit, and it can be used on a gas stove top at moderate flame or with a heat diffuser on electric stove top . Microwave safe. Heat diffuser is needed for any electric stove top use, including smooth glass tops.

Clay pot cookery is very popular all over Chile for baking and serving, and now we're bringing them to the USA. Use soft utensils such as wood, bamboo, or plastic; hand wash. Burned-on food can be removed by soaking the pot in hot soapy water for an hour or so and then use a plastic mesh scrubby.

Bear in mind that this clay is somewhat porous - it's not glazed - so if left sitting with water in it some leakage may occur. Cooking oil is thicker and will not soak through. (It is NOT necessary to soak these pieces in water before cooking.)

While the finish is fairly tough, it could be cured by cooking with oil at first. Clay pots can also be cured with milk. Just boil about a half cup of whole milk in the pot and then discard the milk. The fat content in the milk helps cure the clay. This technique may also help to remove odors from clay.
