
Baking pans are used in the oven - should you preheat the oven? Depends on what you're baking, some items really need to have a stable temperature, such as delicate cakes which can quickly rise and then fall if the temperature rises rapidly. Other foods are not so sensitive, such as a roast or casserole, though cooking time may have to be adjusted without preheating.
