When barbecuing roasts you may want to use a meat thermometer to make sure it's thoroughly cooked. Insert the thermometer into the thickest part, so that it doesn't contact the metal spit rod or fat or bone. Push the thermometer into the meat a little farther when the desired temperature is reached, and if temperature drops you'll know to keep cooking until it rises to the level of doneness you want.
